Quick And Easy Refrigerator Jam!

Have you ever ran out of jam but don't want to go to the store? If you have some frozen fruit in your freezer, you can make a simple small batch of refrigerator jam in about half an hour.

It's also a great way to use up extra fruit from harvest time.

You can use any type of fruit you like, for example, strawberries, raspberries, June berries, peaches, apples, or blackberries. Or mix it up and let your imagination run wild. Today I will be using cherries as that is what I have in my freezer. 

- 300 grams of fruit
- 3/4 cup sugar
- 3 tbsp water
- A splash of lemon juice

- Place all of your ingredients into a saucepan

- Bring to a boil, stirring frequently 
- Reduce heat to medium-low/simmer and cook the jam for 25 minutes

- While it's cooking, if your fruit chunks look large, feel free to give them a few quick blasts with a stick blender

After blasting with my stick blender

- When your jam is done cooking, pour it into a clean jar with lid and store it in the refrigerator. It's ready to eat as soon as it's chilled.
