The Best 5-Minute Sun-Dried Tomato Pesto

This is the best sun dried tomato pesto recipe ever! And, it just so happens that it's also raw, vegan, and gluten-free, so everyone can enjoy it!

Sometimes I just want comfort food, and what's more comforting than warm pasta enveloped by decadent, mouth-watering pesto. Originally, I made this recipe specifically as a treat for my brother who is a vegetarian, and I was surprised at how much I enjoyed it as well, it has since become a fast favorite in our household for vegetarians and meat-eaters alike!


1 1/2 cups sun dried tomatoes
1/2 cup oil of choice (extra virgin olive oil or melted extra virgin coconut oil)
1 tbsp raw almonds or pine nuts
1 clove fresh minced garlic
1/4 tsp basil (fresh or freeze dried)
Salt to taste


1. In a magic bullet or food processor pulse almonds (pine nuts) until crushed.

2. Add sun dried tomatoes, oil, garlic, basil, and salt.

3. Pulse until pesto consistency. I like to leave it a bit chunky for texture.

4. Toss into pasta of choice, julienned vegetable pasta, or gluten free pasta, and enjoy!
